No problem using the stream output option, though I hope that this isn't a
step towards trying to delete that functionality entirely.  I consider
myself moderately knowledgeable, comfortable with software, but would have
been SOL trying to first generate streams without the information provided
in the old streaming window. (the documentation, as everyone knows, is the
best that poeople have had the time/interest to develop, but it's still a
bit weak, and frankly it is handy/easy to copy a working command from the
older GUI, if you need to create a batch file/script)

I also believe that if you want to simplify the Wizard to the extent it is
in the current SVN, it is critical to have an options/defaults window
(accessible from the simplified Wizard) to let the user get "under the hood"
slightly. I have zero idea what underlying CODECs are being chosen, or
bitrate.  Personally, I like MPEG4, but it needs to be appreciated that
there are patent issues, so someone could get in trouble if you
automagically choose MPEG4, or at least a warning (if that is what is used);
likewise, you could default to WMV2, but the user still doesn't know this.

I've got enough time with the app to be pretty comfortable with it, but the
ultra-simplified wizard may have unintentional consequences.  

It's a wonderful app, I'm trying to be helpful by asking about this before
the next release.

IMHO, what you are trying to do gets out of the focus of the streaming
wizard, which should remain simple and limited to simple uses. It is still
possible to start some more complex sout instances, by using the
"traditional way of setting them", using the "stream output" button of the
open file menu. There, you'll get access to all the settings, and to the
resuting command line
