Hi Nikos,
thanks for your interest in VLC.

Please download a so-called po-file here:  
<http://developers.videolan.org/cgi-bin/viewcvs.cgi/*checkout*/trunk/ 
po/el.po?rev=10352>. It contains the current incomplete translation to  
Greek.
I recommend you to use poEdit (poedit.sf.net) to edit it you are on  
Windows or Linux. Otherwise, you can also edit it with a plain text  
editor. With poEdit, you can also create a mo-file of the po-file,  
which you can copy (renamed to "vlc.mo") into the  
locale/el/LC_MESSAGES-folder of the current nightly build to test your  
translation.
I can give some other hints if you use a Mac or just have a look at  
this file:
