You can already change the audio track, the so-called channel mode and the 
output device during playback as things stand, and VLC already handles format 
loss automatically. The only "problem" is that channel mode is so far only 
implemented for stereo inputs, has no options for surround inputs (and is 
probably irrelevant for mono inputs).

So I don't really see what else can reasonably be changed during playback, or 
even at all.
