Indeed, it should be settable even before playback starts.

That's not different that when setting in from the GUI or the 
command-line. For example can we apply the zoom on one ES and not the 
other ? The display mode is actually a kind of crop (for side by side 
and top-bottom at least) so it should be treated the same, except some 
vout might not be able to switch to "stereoscopic crop" mode.
