You can do this with VLC in theory, but not really in practise. You 
should try HandBrake. It is full-featured, easy to use, open-source and 
pretty stable.

Btw. You shouldn't ask these off-topic-questions in the 
vlc-mailing-list. The coffee-section of the forums is a much better 
place to do that.
