Try using VLC's stream function, with Transcoding, and save the streamed
file.

Example:

Open a copy of VLC as a "client". Configure it to listen to UDP, and select
the Save to file option, name the file "test.avi"

Open a second copy of VLC, the Server.
Pick a file that you want to convert.
Run Streaming Wizard.

In Step 2 of Streaming Wizard:
-Select Encapsulation Method AVI
-Select Transcoding video CODEC WMV2
-Select Transcoding audio CODEC mp3

The Server copy of VLC will then change the output file into something that
is more "standard" (more players support the format), and the Client copy of
VLC will get the file and store it to disk.
