Well I seem to on a bit of a roll answering my own posts here :)
Dropping the "deinterlace" fixed things.
I would dearly love to know the following though:

1) why did the deinterlace options cause the problems I described?
(could this be documented somwhere?)
2) is there a nice list of v4l-chromas somewhere?
3) how can one figure out the correct chroma to use without resorting
to trial-and-error?
