It seems a ffmpeg problem with the MPEG-2 encoder. If you are sure your
ffmpeg has this encoder enabled, try resetting the preferences and erasing
the plugins cache:

rm -r ~/.vlc/

Also, ffmpeg can give problems if you have an old version installed, try
uninstalling old versions of ffmpeg if it is the case.
