The question is if we want to distribute the fluidsynth plugin by default on all platforms. According to the user complaints it might make sense to do so with our builds for osx and windows, IMO. And for other platforms doing an VLC application build it might be also ok.
When building as a library, unneeded plugins should be disabled, anyway.

On OSX, the size of the plugin is 1 MB, this is 1% of the complete package size. Same ratio for compressed versions of the files. I don't know is this is an acceptable increase in file size. For me this would be fine.
