You can use the -t option to specify the title and the -T option to specify 
the Chapter in the title (eg: vlc dvd:/dev/dvd -t 2 -T 5). But beware that 
you need the cvs version if you want to use the -T option (this option has 
been reenabled only recently).

If you want you can also send the debug log you've got when you run "vlc 
-vvvvv", it might be helpfull to know why you cannot use the GUI.
