[x265] [PATCH 3 of 4] cli: allow -P/--profile to influence requested API bit-depth

:), we'll see if anyone else has an opinion on the appropriate name for
this option. Not too religious about it.

My main motivation was to tie it firmly to the compile-time option everyone
is already familiar with, so users know exactly what they get, and let the
profile determination function work as before.
