Strange... Have a look at the warning/error messages in
the view->preferences panel. This could be related to the fact the
encapsulation method you chose is incompatible with G729. I don't know
if this codec is supported by any of the muxing methods VLC supports
(you may want to try all of them... ;-) Can you also try to enable the
"Enable Streaming of all ES" option in thje preferences, stream output
tab, advanced options.
